A vaulted, tiled dining room built for lingering — arched ceilings, hand-painted tile work and the warmth of an Assyrian family kitchen. Some meals deserve a proper table.

From Babylon to Fairfield Heights.

The Shlimoun family brought the flavours of ancient Mesopotamia to Fairfield Heights in 2019 — the breads, the grills, the slow-cooked meats that fed the great cities of the Tigris and Euphrates. They named the bakery Babylon: not as a grand claim, but as a homecoming.

Fairfield is the heart of Sydney's Assyrian community, and Babylon Bakery was built to feel like the living room of that community — a place where neighbours sit long past their meal, where families meet on weekday mornings and Saturday nights alike. The arched ceilings, the blue and gold, the tile work: all a quiet echo of the Ishtar Gate that once stood at the northern entrance of Babylon itself.

More than two generations of Assyrian baking technique live in every flatbread we pull from the oven. We haven't changed the recipes. We don't plan to.
